Cuban Chicken



















 

Ingredients (Serves 4)

1/4 cup fresh lime juice
1/4 cup chopped fresh coriander stems
2 tablespoons Hemp oil
1 tablespoon finely grated lime peel
1 tablespoon chopped fresh thyme
2 teaspoons chopped seeded jalapeño chile
2 teaspoons smoked paprika
2 teaspoons ground black pepper
1 teaspoon ground cumin
1/2 teaspoon rock salt
1/4 teaspoon ground allspice
8-10 chicken thighs with skin and bone (about 4 1/2 pounds)

Directions

  1. Get hold of some food freezer bags, ideally the zip kind
  2. Throw all the ingredients into the bag and shake up to mix well
  3. Leave for 24 hours to marinate
  4. Remove from the bag
  5. Grill until cooked. 
  6. Serve with salad, brown rice (if you need some carbs) and definitely a good splash of hot pepper sauce

What's good about this meal

- The chicken is a great source of low fat protein and it tastes so good on the Bar B Q instead of fat laden sausages and burgers
