Ingredients (Serves 4)
1/4 cup fresh lime juice1/4 cup chopped fresh coriander stems
2 tablespoons Hemp oil
1 tablespoon finely grated lime peel
1 tablespoon chopped fresh thyme
2 teaspoons chopped seeded jalapeño chile
2 teaspoons smoked paprika
2 teaspoons ground black pepper
1 teaspoon ground cumin
1/2 teaspoon rock salt
1/4 teaspoon ground allspice
8-10 chicken thighs with skin and bone (about 4 1/2 pounds)
Directions
- Get hold of some food freezer bags, ideally the zip kind
- Throw all the ingredients into the bag and shake up to mix well
- Leave for 24 hours to marinate
- Remove from the bag
- Grill until cooked.
- Serve with salad, brown rice (if you need some carbs) and definitely a good splash of hot pepper sauce
