Spinach Omelette

Ingredients

3 Free Range Eggs
Baby Spinach - ideally Organic
Rock Salt
Pepper
Red Chilli - optional
Hemp Oil

Directions

Beat the eggs in a jug and add the remaining ingredients. The fresh chilli is definitely an acquired taste first thing in the morning but it does fire up the metabolism if you are brave enough.

Heat a little hemp oil in a frying pan and add the egg mixture.

As the bottom side sets - finish the top side under the grill to give a really big puffy omelette

What's good about this meal

- The eggs are a great hunger quenching source of protein that won't cause your insulin levels to spike like sweet cereals leaving you hungry again very soon after.
- The Spinach is not only one of your five a day but it is also a great anti-oxidant
- The Chilli will fire up your fat burning metabolism
